Pudding Base:

1 cup unsweetened almond milk (or any plant-based milk of your choice)

2 ripe avocados

1/2 cup raw cacao powder (or unsweetened cocoa powder)

1/4 cup maple syrup (adjust to taste)

1 teaspoon vanilla extract

A pinch of sea salt

1/2 cup Grainwell Puffed Amaranth

2 kiwis, peeled and sliced

1/2 cup fresh raspberries

2 tablespoons hulled hemp seeds

2 tablespoons cacao nibs

1. Prepare the Pudding Base:

  • In a blender or food processor, combine the almond milk, ripe avocados, raw cacao powder, maple syrup, vanilla extract, and a pinch of sea salt.
  • Blend until the mixture is smooth and creamy. Taste and adjust the sweetness by adding more maple syrup if desired.
  • Transfer the pudding to a bowl and cover it with plastic wrap. Refrigerate for at least 1 hour to let the flavors meld and the pudding set.

2. Prepare the Toppings:

  • While the pudding is chilling, prepare the kiwi and raspberries. Peel and slice the kiwis, and gently wash and pat dry the raspberries.
  • Measure out the Grainwell Puffed Amaranth, hulled hemp seeds, and cacao nibs.

3. Assemble the Pudding:

  • Once the pudding has set, remove it from the refrigerator.
  • Spoon the pudding into serving bowls or glasses.

4. Add the Toppings:

  • Sprinkle a generous amount of Grainwell Puffed Amaranth over the top of each serving of pudding.
  • Arrange the kiwi slices and raspberries on top of the pudding.
  • Sprinkle hulled hemp seeds and cacao nibs for added texture and flavor.
