2 cups Grainwell Puffed Buckwheat
1 cup rolled oats (gluten-free if needed)
1/2 cup almonds, chopped
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/4 cup chia seeds
1/4 cup flax seeds
1/2 cup almond butter (or any nut/seed butter of your choice)
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt

1. Prepare the Ingredients:

  • Preheat your oven to 350°F (175°C).
  • Line an 8×8 inch (20×20 cm) baking dish with parchment paper, allowing some excess to hang over the edges for easy removal later.

2. Toast the Dry Ingredients:

  • Spread the rolled oats, chopped almonds, and pumpkin seeds evenly on a baking sheet.
  • Toast in the preheated oven for about 10 minutes, stirring once halfway through, until lightly golden and fragrant. Remove from the oven and let them cool slightly.

3. Combine Dry Ingredients:

  • In a large mixing bowl, combine the toasted oats, almonds, and pumpkin seeds with the Grainwell Puffed Buckwheat, dried cranberries, chia seeds, and flaxseeds. Mix well to evenly distribute the ingredients.

4. Prepare the Wet Mixture:

  • In a small saucepan, combine the almond butter and maple syrup (or honey).
  • Heat over low-medium heat, stirring constantly until the mixture is smooth and well combined.
  • Remove from heat and stir in the vanilla extract, cinnamon, and salt.

5. Mix Everything Together:

  • Pour the wet mixture over the dry ingredients in the mixing bowl.
  • Use a spatula or your hands to thoroughly mix everything together, ensuring all the dry ingredients are well coated with the wet mixture.

6. Press and Chill:

  • Transfer the mixture into the prepared baking dish.
  • Use a spatula or the back of a spoon to firmly press the mixture down into an even layer.
  • Place the dish in the refrigerator and let it chill for at least 2 hours, or until the mixture is firm and set.

7. Cut and Serve:

  • Once the mixture is set, use the parchment paper to lift the granola slab out of the baking dish.
  • Place it on a cutting board and cut it into bars of your desired size using a sharp knife.
