Khorasan wheat takes its name from the historical Khorasan region of ancient Persia, which spanned what is now northeastern Iran and parts of Central Asia. A tetraploid relative of durum and emmer wheat, it has been cultivated across the Middle East and Central Asia for thousands of years and remains largely unchanged by modern breeding, which places it among ancient grains like emmer, einkorn, and spelt. Its kernels stand out for being large, amber-colored, and roughly twice the size of common wheat.
The grain is also sold under the trademarked name Kamut®, a registered form of khorasan wheat.
Khorasan is a treasure trove of nutrients. This ancient grain boasts a higher protein content than common wheat, making it a substantial addition to any diet.
